Purple Biko

The FACCGN Event “Edibles” featured the food and culinary businesses owned by its Chamber members. That night, Cutting Board Filipino GastroPub’s Barry Bond Picazo and Chef Gloria Escobar, turned out a spread which was definitely the toast of the attendees that night. Biko, a popular Filipino dessert, topped with nutty Toasted Coconuts, is prepared from Mountain Violet Heirloom Rice from the Cordilleras. Purple Biko, how anymore exquisite can that be!

INGREDIENTS:

  • 2 cups Eighth Wonder Mountain Violet Rice
  • 1 cup brown sugar
  • 3-1/2 cups diluted coconut milk
  • 1/8 c butter

INSTRUCTIONS:

  • In a skillet, mix brown sugar, coconut milk, butter and the rice and let boil until the rice cooks and has a sticky texture.
  • Allow to cool and serve.
