Olive's Bangus Sardines

This is the last of our Homemade Bangus (Milkfish) cooked Spanish Style. This recipe comes from my mother, and I realize, I have really become a lot like her now, down to the manner of cooking a lot and sharing food. This fish specialty was a staple for every post Christmas or New Year family celebrations. Popularly known as Bangus Sardines to many, which actually refers to two kinds of fish, and therefore, a misnomer, this is a homecooked special which we shipped to relatives this Christmas season. This keeps really long, and can be enjoyed with Pan de Sal, baguettes, crostinis, but for us, garlic fried rice still makes the perfect pair.

INGREDIENTS:

  • 1 kg Baby Milkfish
  • 2 pc carrots, sliced
  • 6 pcs whole pickles, sliced diagonally
  • 15 pcs red “labuyo” chili
  • 1 pc onion, sliced
  • 2 tbsp sea salt
  • 1 teaspoon whole black pepper
  • 6 leaves of Laurel or bay leaves
  • 1/2 cup rhum or gin
  • 2 cups corn or canola oil
  • 1/2 cup vinegar
  • 4 cups water

PROCEDURE:

  • Combine everything in pressure cooker.
  • Cook high for 45min. and low for 15min.
