Gazpacho

What is Spanish, cold, raw and can be intense yet subtle? No ladies, not the word Macho but GAZPACHO. This cold and raw soup is called by this name. Enjoying the last of the tomato harvests, as they seem to be dying of the heat in my backyard, I decided to make this classic gazpacho soup, a traditional Spanish soup made from tomatoes, cucumber, onions, herbs and spices. The soup does not go through any cooking process and makes for a perfect summer treat. Crusty bread and Prosciutto make a perfect pair with it. So Gazpacho!!! Maravilloso!

INGREDIENTS:

  • 2 cups tomato juice
  • 4 medium tomatoes, peeled and finely chopped
  • 1/2 cup chopped seeded peeled cucumber
  • 1/3 cup finely chopped onion
  • 1/4 cup olive oil
  • 1/4 cup cider vinegar
  • 1 teaspoon sugar
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

INSTRUCTIONS:

  • Combine all of your gazpacho ingredients in a blender or food processor, and puree for 1 minute or until the gazpacho reaches your desired consistency. 
  • Transfer the soup to a sealed container and refrigerate for 4 hours or until completely chilled.
  • Serve cold
