Baked Bell Pepper with Mushroom and Heirloom Rice

 

INGREDIENTS:

  • Bell pepper
  • Olive oil
  • Garlic’
  • Onions, chopped
  • Portobello mushrooms.
  • Raisin
  • Red pepper
  • Heirloom rice

INSTRUCTIONS:

  • Sautée olive oil with garlic, chopped onions, Portobello mushrooms, raisins, red pepper
  • Add cooked heirloom rice
  • Fill in the stuffing to hollowed out fresh bell pepper and bake at 375ºF for 15 minutes.
  • Serve
