Baked Bell Pepper with Mushroom and Heirloom Rice
INGREDIENTS:
Bell pepper
Olive oil
Garlic’
Onions, chopped
Portobello mushrooms.
Raisin
Red pepper
Heirloom rice
INSTRUCTIONS:
Sautée olive oil with garlic, chopped onions, Portobello mushrooms, raisins, red pepper
Add cooked heirloom rice
Fill in the stuffing to hollowed out fresh bell pepper and bake at 375ºF for 15 minutes.
